Springtime "Sweet Tooth" Funfetti Cake

Have a little "fun" this Spring with a Funfetti Cookie Cake

It's time for Easter Eggs, Flowers and Springtime Colors!


*for the funfetti cookie cake:

1/2 cup unsalted butter, at room temperature 3/4 cup granulated sugar 1 large egg + 1 egg yolk 2 tsp vanilla extract 1-1/2 cups all-purpose flour 1/4 tsp salt 1 tsp baking powder 1/2 tsp baking soda 1-1/2 tsp cornstarch 2/3 cup white chocolate chips 1/2 cup rainbow sprinkles

*for the vanilla buttercream:

1/2 cup unsalted butter, at room temperature 1-3/4 cups powdered sugar 2 tbsp heavy cream 1-1/4 tsp vanilla extract Pinch of salt


*for the funfetti cookie cake:

-Preheat the oven to 350 degrees and spray a 9" cake pan with nonstick spray. Set aside.

-In the bowl of an electric mixer, beat the butter for about 1 minute on medium speed. Add the sugar and continue beating for 2-3 minutes, until light and fluffy in color. Add the egg, egg yolk, and vanilla, and continue to beat, scraping down the sides as needed.

-In a medium bowl, whisk together the flour, salt, baking powder, baking soda, and cornstarch. With the mixer on low speed, slowly add the dry ingredients, until just combined. Once combined, gently fold in the white chocolate chips and sprinkles by hand with a rubber spatula.

-Press the cookie dough evenly into the prepared pan and bake for 20-25 minutes, or until very lightly browned on top. You want the cookie cake to be extra soft in the center, so careful not to over bake. Allow the cake to cool completely on a wire rack at room temperature before frosting. The center will sink slightly- that's normal.

*for the vanilla buttercream:

-In the bowl of an electric mixer, beat the butter for 2 minutes on medium speed, until light and creamy. Add the powdered sugar, cream, vanilla, and salt with the mixer on low speed.

-Increase the speed to high and beat for 3 minutes. Transfer buttercream to a piping bag fit with a large star tip, and pipe a generous border around the cookie cake. If you want to make a design in the center, switch to a smaller star tip, and dye any remaining icing if you wish. And as always, after you enjoy this delicious treat, be sure to brush your teeth!
